The Ballina Dúbailte Single Malt Irish Whiskey is the signature expression of Ballina’s core range, showcasing a beautifully balanced marriage of bourbon and Oloroso sherry cask maturation. Double distilled and double wood matured, “Dúbailte” — the Irish word for “double” — reflects both the whiskey’s production style and its layered character.
Matured in a combination of 55% bourbon casks and 45% Oloroso sherry casks, this single malt delivers an elegant balance between sweetness, fruit, spice, and richness. The bourbon influence brings bright vanilla and honeyed softness, while the sherry casks add depth, dried fruit character, and warming spice.
On the nose, expect delicate aromas of honey, green apple, pear, and honeydew melon. The palate is medium-bodied and smooth, opening with notes of vanilla fudge and butterscotch before evolving into classic sherried flavours of raisins, dried fruits, gentle nuttiness, and warming spice. The finish is lingering and comforting, with subtle hints of walnut and honey remaining on the palate.
Approachable yet complex, Ballina Dúbailte is equally enjoyable neat, with ginger ale, or as the base for a refined Whiskey Sour. For those exploring modern Irish whiskey in Ireland, it offers an elegant introduction to Ballina’s distinctive style and cask-driven character.
