Baldur's Release No.008 8 Year Old Islay Cask Finish Canadian Single Malt Whisky is a limited single malt from Last Mountain Distillery in Lumsden, Saskatchewan. Crafted from 100% malted barley and matured for eight years, the whisky begins its maturation in a once-used bourbon cask before being finished in a cask that previously held peated Islay whisky. Bottled at 51.3% ABV, the Islay cask contributes coastal smoke and salinity to a foundation of honeyed malt, vanilla, caramelized sweetness and toasted oak.
Food Pairing: Smoked brisket, grilled lamb, smoked salmon, aged cheddar, charred pork, toasted almonds, dark chocolate, and caramel desserts.
Tasting Notes: Rich and expressive, combining honeyed malt and vanilla sweetness with toasted oak, dried fruit, baking spice, coastal salinity and soft peat smoke.
Nose: Gentle peat smoke with caramelized sugar, toasted oak and subtle maritime salinity.
Palate: Honey, vanilla and malted biscuit develop into smoke, charred wood and brine, with dried fruit and baking spice adding complexity.
Finish: Long and warming with soft peat smoke, sea salt and lingering delicate sweetness.
