Tasting notes: Red fruits, Brown spice, Cooked apple
Volcan Azul is located in Alajuela, Costa Rica, and is overseen by fifth-generation producer Alejo Castro. The estate’s history reaches back to the late nineteenth century, and Castro continues to expand its diversity with cultivars and varieties including Catuai, Caturra, Obata, Villa Sarchi, Gesha, and SL28.
For this lot, ripe SL28 cherries were selected and milled at Volcan Azul before natural processing. April identifies red-fruit, brown-spice, and cooked-apple notes, with pronounced sweetness and acidity and a lighter body.
