About Coffee
The Producer: Alemayehu Hillo
This coffee comes from Alemayehu Hillo, a dedicated smallholder producer in the Sidamo region, working within the OCR Smallholder Series. Through this program, individual farmers receive recognition for their work, allowing their coffees to be traced back to the people and practices behind them. Alemayehu’s approach emphasizes careful cultivation, selective harvesting, and consistent quality, reflecting a deep understanding of his land and crop.
Origin: Sidamo, Ethiopia
Sidamo is one of Ethiopia’s most diverse and respected coffee-growing regions, known for its high elevations, fertile soils, and cool climate. These conditions encourage slow cherry maturation, resulting in coffees with refined acidity, layered sweetness, and aromatic complexity. Smallholder farms in this area typically rely on traditional methods passed down through generations, contributing to Sidamo’s distinct and recognizable cup profiles.
Natural Processing
For this natural lot, ripe cherries are selectively handpicked and dried whole on raised beds under the Ethiopian sun. Careful turning and close monitoring ensure even drying and controlled fermentation, allowing fruit character to develop cleanly without overwhelming the structure. This process enhances sweetness and depth while preserving clarity and balance in the cup.
The result is a natural Sidamo that feels lively yet precise, offering fruit complexity, gentle florals, and a polished finish—an authentic expression of Alemayehu Hillo’s work and Ethiopia’s enduring coffee heritage.
